As we already know, menu plans do not always go as planned. Last Thursday my plan was to make Spaghetti and Mussels for our meal. Plans changed a bit since a good friend of mine recently had a new baby and I offered to make her family a dinner. Since I was planning to make a nice, hearty meal for them, I decided to change my own plans and make the same for our family. I ended up cooking two delicious homemade chicken pot pies. It was fabulous. I served it with a side salad and we enjoyed the leftovers on the weekend.
We have quite a busy week ahead with my oldest heading back to college on Friday so I am planning to keep this week’s menu quick and simple.
Monday: Morning Star Farms Chick Patties on Light Hamburger buns with roasted red pepper spread, lettuce, tomato and a side salad
Tuesday: Chicken Cutlets, mashed potatoes and corn (my oldest daughter’s favorite…for her birthday dinner) and of course, cake for dessert to celebrate her 20th Birthday!
Wednesday: Veal Parmagiana, Healthy Harvest egg noodles and a veggie blend
Thursday: My son has soccer practice at 6:00 and my hubby needs to pick up his tux for the black tie wedding we are going to on Saturday, so we will be choosing from frozen entrees in the freezer – Weight Watchers or Lean Cuisine meals for me and hubby and Kids Cuisines for the kids
Friday: Date Night! (Not sure where we will be heading yet)
