Our Family’s Favorite Christmas Breakfast Casseroles Recipes

Here is a run down of my favorite Christmas Breakfast Casseroles. We make these every year and they are always a huge hit. I love the fact that you prepare them the day before so they are all ready for baking Christmas morning. Enjoy.

Baked French Toast Casserole

8 slices of Texas Toast -or- a loaf of french bread cut into 1 inch slices
6 eggs
2 cups half and half
2 tsp vanilla extract
1/4 tsp cinnamon
3/4 cup butter
1 1/3 cup brown sugar
3 TBSP light corn syrup
chopped pecans (optional)

Butter 9×13 glass baking dish
Arrange bread slices into dish. (I cut my Texas Toast diagonally corner to corner before placing in dish) Beat eggs, half & half, vanilla and cinnamon. Pour over bread slices, cover with tin foil and refrigerate overnight.

In morning, preheat oven to 350 degrees. Place covered casserole dish on a baking sheet and bake for 20 minutes. While cooking, combine butter, brown sugar and corn syrup in saucepan on stove; heat until bubbling.
After 20 minutes, remove tin foil and pour butter sugar mixture over french toast and sprinkle with pecans if using. Place back in oven and bake for an additional 20 minutes. Enjoy!

Sausage Breakfast Casserole

1 pound ground pork sausage
1 teaspoon mustard powder
1/2 teaspoon salt
4 eggs, beaten
2 cups milk ( I use reduced fat)
6 slices white bread, toasted and cut into cubes
8 ounces shredded Mexican Blend or Cheddar cheese

Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain well, squeezing out all of the excess grease
Combine and mix mustard powder, salt, eggs and milk.
Add the sausage, bread cubes, and cheese and stir.
Pour mixture into a greased 9×13 inch baking dish.
Cover with tin foil and chill in the refrigerator overnight.
In the morning, preheat oven to 350 degrees
Bake covered casserole 45 to 60 minutes. Uncover and decrease temperature to 325 degrees. Bake for an additional 30 minutes, or until done

Ham Strata

12 slices of bread, cubed
1 stick butter
12 oz sharp cheese either cubed or shredded, your choice
1 quart of milk
6 eggs
1 1/2 tsp dijon mustard
2 cups ham (cubed)…I usually use ham steaks cut up

In a 9×13 baking dish, put cubed bread, cubed cheese and melted butter
In bowl, beat eggs, add milk, mustard and ham…then pour into baking dish and mix.
Cover with tin foil. Refrigerate overnight
Next day, bake uncovered at 350 degrees for 1 hr.
