Menu Plan Monday – 1/2/12

Sorry this post is a little late today.  I have been having so much trouble posting links to my Facebook page that I have been spending all of my energy trying to figure out how to post my links for you instead of writing valuable posts for you to enjoy.

That being said – it’s the New Year and like most out there, I am hoping to refocus on my health, eating well, exercise and my overall well being.  As I have been told a million times before, I am no good to my family if I am not taking care of myself. 

Thus, my quest to plan weekly meals in advance each week, I am hoping, will keep me focused on healthy eating while also being beneficial to my entire family.  It also does not hurt financially to plan ahead, especially when busy schedules like to overtake the week. Planning ahead prevents stops at convenient fast food spots.

This time of year is perfect for crockpot cooking, so be prepared to see quite a few crockpot recipes in the weekly line ups as well. 

I hope you will join me in sharing your meals and recipes with us as well.  I always like trying new menu items, especially family friendly meals.

Here’s our menu plan this week:

Monday – Baked crab cakes, mashed potatoes, stewed tomatoes

Tuesday – I’m trying out this great new copycat crockpot recipe that I found online for Tony Luke’s Italian Roast Pork Sandwich (The Real Deal) that I found over at Food.com.  I am going to serve it on light hamburger buns to save calories and I am topping it with cooked spinach instead of broccoli rabe, since I find broccoli rabe to be a bit bitter for my liking.

Wednesday – Homemade Ham and Bean Soup (Thanks, Mom) and salad

Thursday – Leftovers

Friday –  Lean Cuisines
