Eileen’s One Pan Chicken {Recipe}

My mother-in-law first made this recipe for me way back when I began dating my husband.  Not only is it delicious, I love that it is made using one pan on the stove top.  My whole family enjoys it and I love that it is quick and easy, especially during the week when schedules are extra busy!  Hope that you enjoy it as much as we do!  If you make it, be sure to leave me a comment letting me know what you think!

Eileen’s One Pan Chicken

  • 4-6 boneless chicken breasts (I prefer cutting them thin)
  • Salt and Pepper to taste
  • Balsamic vinegar
  • Olive oil
  • One Jar of Chicken Gravy
  • 1 Heaping Tablespoon of Country Dijon Mustard (I use Gray Poupon)

Heat approx 1 Tablespoon of olive oil in a pan.  Carefully add chicken, sprinkle with salt and pepper and brown on both sides.  Once brown,  remove chicken and drain remaining water from pan.

In a bowl, combine Chicken gravy with Country Dijon Mustard and stir well.  Set aside.

Add chicken back to pan and sprinkle generously with balsamic vinegar.

Top with Gravy/mustard mixture and cover with a lid.  Cook on low approximately 20 -30 minutes (for thin sliced) or until cooked through (thicker pieces of chicken should be slow cooked longer).

Tastes delicious served with rice or egg noodles and your favorite steamed vegetable!
