Last week of the month before school comes to an end means lots of meetings, concerts, end of the school year trips and ceremonies. I have a feeling the next few weeks are going to be a blur! Talk about busy! I’m trying my best to plan dinners that are not too overwhelming and can either be prepared in advance, can be eaten quickly or on the go, can reheat quickly or have very little clean up. That will be my plan pretty much the remainder of this month. As long as I am menu planning I will call that a win! Here is what is on our menu:
Sunday – Baked Salmon (tried the frozen Wild Caught Salmon from Aldi this week and it was really yummy), Rice and Broccoli
Monday – Turkey Hot Dogs on Hot Dog buns and a side of baked French fries
Tuesday – I’m using a Campbells Classic Roasted Chicken Oven Sauce Pack to make a one dish dinner of Chicken, potatoes and carrots
Wednesday – Lunchmeat Sandwiches
Thursday – Korean Beef and Rice with a side of Broccoli
Friday – Pizza for the kids, sushi for hubby and me
