Recipes:

Missy’s Chicken Salad

Boil chicken in a pot on the stove on low for about 1 hour…make sure chicken is fully covered in water (easiest to use boneless chicken breast…I usually use about 2-3 pounds to make 1 large bowl for you girls)…you can add finely chopped celery, onion and parsley if you like it while it is boiling….sometimes I do and sometimes I don’t (sometimes I cheat and just sprinkle in a little dry minced onion seasoning)…it just depends if I have it or not (as a short cut …if you do not want to boil chicken or do not have time, you can buy a rotisserie chicken and pull it apart and use the cooked meat instead to save time or use leftover chicken meat from another meal to avoid having to boil the chicken at all)
let chicken cool, then pull apart or cut into small pieces.
Add celery, green onions, parsley (if using),chopped apples (I usually use either gala, red or granny smith) (another option could be to use red grapes sliced in half instead of apples for a different taste…they would go really good with almonds instead of walnuts I think) & chopped walnuts (if you like them …or you can use chopped pecans or sliced almonds instead if you like them, but i usually don’t put them in until serving so they do not get soggy) to the pulled chicken.

Add dressing (make this on the side in a bowl, mix then add a little at a time until you get the consistency you like)…you may not need it all, it depends how much chicken you are making)
Dressing:
1 cup mayo (you can use regular or light mayo, it really doesn’t matter…just don’t use fat free)
3/4 cup sour cream (I use light sour cream)
1 Tablespoon extra virgin olive oil
1 – 2 tablespoons honey
salt and pepper

Cool and refrigerate before serving.

It tastes really good on honey wheat bread, wheat bread, pita bread, rolls, crackers….ENJOY!!

Andrea’s Quiche Recipe
1 frozen deep dish pie shell
Bake shell alone about 5 to 10 minutes at 425
1 pkg. frozen chopped spinach OR frozen chopped broccoli OR 1 can of crab meat, drained
3 eggs, beaten
1/2 cup of mushrooms
1 cup of light cream
1 cup of shredded cheese
1 chopped onion
Cook vegetables, drain well. Put in shell – add mushrooms, onions and salt and pepper.
Pour in eggs, add cheese and pour in cream.
Bake at 450 for about 15 minutes, lower to 325 for another 15 minutes
