Menu Plan Monday – A Day Late

Yesterday was an incredibly busy day.  After a long weekend away, I needed to catch up at home so that we could go out to celebrate my husband’s 40th birthday.  Although I had been thinking about my menu, I never found time to stop and post it.  So as they say, better late than never:

Monday – Out to dinner at Panda Asian Fusion to celebrate my husband’s 40th Birthday.  Located in Holmes on MacDade Blvd, this little restaurant has fast become one of our local favorites.  My husband LOVES sushi so it was not a surprise when he chose this restaurant to celebrate.  The great thing about it is that they also serve Chinese, Thai, and  Hibachi.  There is something for everyone on this menu.  It doesn’t hurt that they also have the most delicious Wonton Soup!  My husband almost always opts for the all-you can-eat sushi deal, which at $19.99 is quite a deal and a great way to try all different types of sushi.  Oh and did I mention it’s also a BYOB?  Can you see why we love this little place so much?

Tuesday – Fat Tuesday Inspired – Low Fat Jumbalaya ( I am planning to substitute chicken sausage to make it even leaner)

Wednesday – Baked Salmon, mashed potatoes, asparagus

Thursday – Balsalmic chicken, steamed edamame, mixed veggies

Friday – Date Night – out to dinner
