So it’s been a little over a week since my surgery and I am slowly getting back to myself. I am so glad that I took the time to pre-make and freeze meals prior to my surgery. I still have plenty to get me by this week. With my kids busy schedule, I am really seeing just how helpful freezer cooking can be (I may try doing this once a month).
Monday – Crockpot Teriayki Chicken served over brown rice
Tuesday – My son has swim clinic and a baseball game which leaves no time for cooking or eating. We will be having dinner in the car! PB&J for the kids, Wawa Shorti hoagies (turkey with roasted red peppers) for me and hubby
Wednesday– Vegetable Lasagna for me and hubby; Stuffed Shells for the kids
Thursday – Leftovers
Friday – Baked Parmesan Tilapia, garlic mashed potatoes, veggies
Softball season has started here. Right now it is just practice but once games start, we’ll be running alot. Hopefully, I can still get some meals made but I’m sure we’ll be eating in the car a good bit, too!
