This week is a busy one at our house. The kids are on spring break but all of their extra curricular activities are on schedule as usual. I am also scheduled for a procedure on Thursday which will have me off my feet for a few days. So, last Friday I took the entire morning out to prepare and freeze a bunch of meals for next week since I will be taking some time to rest. I made beef stew, pulled pork, turkey sloppy joes, Crockpot Teriayki Chicken, and Taco Meat. I placed them in Ziplock freezer bags and lay flat to freeze for easy storage. They should make for some easy meals next week.
This week I am trying to keep the meals simple and spend the bulk of my time cleaning and prepping for my time off. I recently came across some great Gorton’s seafood products in the freezer section of the supermarket that I am happily adding to this week’s menu. These items are super easy and absolutely delicious!
Monday – Gorton’s Grilled Garlic Shrimp with sauteed peppers and onions. I will serve over a bed of rice
Tuesday – Grilled Teriayki Chicken, buttered noodles, veggies
Wednesday – Gorton’s Garlic and Herb Skillet Tilapia, Rice and Veggies
Thursday – No meals planned – my kids are staying with my parents and I will be in recovery mode
Friday – Pizza
