Last week, I totally forgot that it was the first week of Lent as I was creating my menu plan. Thus, I had to exchange two meals that I had planned for meatless meals instead. I carried over the two meals that I did not end up making to this week’s menu. Looking forward to trying 3 new recipes this week!
Monday – Turkey Hot Dogs, Baked French Fries, Baby Carrots and Ranch dip
Tuesday – Copycat P.F. Chang’s Chicken Lettuce Wraps, Brown Rice
Wednesday – Easy Beef Enchiladas, steamed veggies
Thursday – Spicy Chicken Rigatoni (Thinking about substituting turkey kielbasa for the Chicken)
Friday – Pizza
