Menu Plan Monday – What’s Cooking at Our House This Week (Tuesday Edition)


It’s the first full week back in school for the kids and already the sports schedules are starting up.  With both kids practices just before and just after dinner 4 to 5 days a week, I have a feeling that finding time to cook dinner is going to get pretty interesting.  Since it’s a short week, I’m making a few easy meals from what I already have on hand and I plan to start checking out Pinterest for freezer meal ideas as well as one dish dinners and crockpot meals.  I always like a good challenge so I’m eager to see which meals we find work best over the course of the school year.  If you have any favorites that work well for you and your family, please share!

Monday – We celebrated Labor Day with a long Day at the pool with family and we ordered sandwiches from Primo Hoagies in Prospect Park and the kids ordered Inside Out Pizzas and salad from Double Decker Pizza in Ridley Park.  It was such a nice relaxing day and I cannot tell you how sad I am to see the summer coming to an end!

TuesdayBaked Parmesan Pork Chops (one thing I do differently with mine is that I lightly sprinkle all of the chops with Mrs Dash Garlic and Herb seasoning on both sides, place on a plate, cover with plastic wrap and and marinade in fridge all day or overnight – then when ready, I proceed with the linked recipe), oven roasted potatoes, corn on the cob (My kids also really enjoy dipping pork chop pieces in ranch dressing when they eat it)

WednesdayChicken and Stuffing Casserole, Caesar Salad

Thursday – BBQ Turkey Kielbasa, Mashed Baby Red Potatoes, steamed veggies

Friday – Sushi
