One thing that my kids absolutely love is helping in the kitchen.  They are always trying to create new fun recipes and are especially excited about coming up with new desserts for the whole family to enjoy.  Recently on a shopping trip to GIANT Food Store, my kids were chatting about ice cream cakes.  They started asking if there was a way we could make our own at home.  With all of the awesome Peppermint Inspired products that GIANT is featuring this holiday season that I told you about a few weeks ago, it got me to thinking about some fun and creative ways to enjoy some of our favorite products from the Peppermint Inspired Creations line.  In the spirit of keeping up with portion control and to be able to keep a few special snacks on hand for guests, I decided to try out a fun Peppermint Ice Cream Cupcake recipe.  Much to my surprise, these frozen little delights came out even better than I expected – and I love how festive they look for serving to guests.  Although they take a little time to prepare and freeze, they are rather simple to make and a great way to get the kids involved in the kitchen!

This recipe features 3 of my favorite GIANT Peppermint Creations products – Peppermint Ice Cream, Peppermint Chocolate Sandwich Cookies and Peppermint Crushed Baking Chips.  We also grabbed some mini chocolate chips from GIANT’s own brand line of products.  In addition, you will need your favorite chocolate cake mix, some whipped cream (the GIANT Peppermint Whipped Cream would have been ideal, but all of our local stores were sold out), and a bottle of Magic Shell. (Keep in mind – you can always substitute GIANT’s Own Brand Mint Chocolate Chip Ice Cream and GIANT’s Own Brand Chocolate Sandwich Cookies ) once the Peppermint Ice Cream and Peppermint Cookies are gone! Time to have some fun!

I will tell you – My kids were my first taste testers and they can be some difficult critics! They told me they absolutely LOVED them! So – they are sure to be enjoyed by Peppermint Lovers big and small!

One small tip I also found is that you can top with the whip cream, peppermint crushed baking chips and mini chocolate chips and pop back in the freezer until ready to serve – it allows the whipped cream to harden a bit and goes really well with the overall texture of the dessert!
