Menu Plan Monday – What’s Cooking at Our House This Week



My weekend was a whirlwind of celebrations for my husband and son and all of their band mates of the South Philadelphia Stringband.  This year was the first time in over 40 years that their band took first place in the Philadelphia Mummer’s parade.  I’m sure for many of you,  you may have no real understanding of what that means but for my husband, brother-in-law, father-in-law, my son and all of my husband’s cousins and friends who are involved – well it is probably one of the most exciting things they have ever experienced!  They literally work on their presentations from January to December every year. It’s a hobby that required dedication, skill and passion. Winning the top prize has been so much fun for them – and this beautiful weekend could not have been more perfect for an absolutely awesome celebration, gala and serenade.  Although now that we are mid-week and I should be back to reality, I am just now realizing that despite planning and following a meal plan for the week I had neglected to post one here on the blog.  So as they say, better late than never.  Here’s what I have planned this week. (And hope hope you are all enjoying this perfect weather – and firing up your grills this week!)

Monday – Grilled Italian Chicken Sausage links, grilled pepper and onion packets and grilled corn packets

TuesdayKorean Style Pork Chops, Olive Oil and Garlic Couscous, steamed green beans

Wednesday – Shake & Bake Buffalo Chicken, baked potatoes, steamed mixed veggies (I never ended up making this last week)

Thursday – Eggplant Parmigiana and Manicotti

Friday – Pizza for kids, tuna sandwich for hubby and I’m heading out to dinner with friends
