Now that the kids are home for summer I feel like I can barely keep the refrigerator stocked for a day! Anyone else feel this way too? Since I was smart enough to stock up on some reduced price meats while shopping at Aldi last week, I have been trying to avoid hitting the grocery store this week (and next) except for necessary staple or fresh items. Lunch will be consisting of leftovers or sandwiches, making it much easier to avoid food waste. It’s already getting more difficult to have a nice family dinner with swim practices, meets and events at the pool, but I am relying heavily on my slow cooker and advance meal prep to help me from ordering out too frequently. Which by the way – last week’s Ham, Potato and Green Beans slow cooker recipe was a huge hit with the family – so yummy!! Here is what we have planned this week:
Monday – Turkey Hot Dogs on Hot Dog Buns, baked french fries
Tuesday – Slow Cooker Italian Chicken Thighs and Sweet Potatoes, steamed veggies
Wednesday – Taking advantage of Wawa’s Hoagiefest and ordering some Classic Hoagies to bring along to the pool for dinner.
Thursday – Lite Kielbasa with beer and sauerkraut in the slow cooker, Brown Rice, steamed veggies
Friday – Swim Team Pasta party at the pool
