This weather has been sweltering! Boy does this heat make it difficult to plan out meals that everyone will enjoy despite the heat – or what?! Even grilling has become unbearable on these 90+ degree days! Thanks to central air conditioning I can still turn on the oven if needed to quickly cook dinner – the key is to find quick recipes with minimal prep that I can get in and out of the oven in 30 min or less. I have found that sometimes cooking dinner early in the morning and plating to reheat for dinner has been helping as well. It definitely keeps dinner time less hectic and the house a little cooler as we sit to to eat. What are your tips and tricks for meals while beating the summer heat? Here is what we have planned this week:
Monday – Veal Parmagiana Patties, roasted potatoes, green beans (cooked in the morning and will reheat in the microwave for dinner)
Tuesday – French’s Crunchy Onion Chicken tenders (served with Ken’s Light Honey Mustard Dipping Sauce), mashed potatoes, steamed veggies
Wednesday – Salads with grilled chicken
Thursday – So excited to be heading to see a screening of Bad Moms with some friends so dinner will be kept super simple by making sandwiches, which I can make ahead! Anyone else excited to see this movie? It looks hilarious!!
Friday – Sushi for hubby and me, Chinese Food for the kids
