This week I have decided to use up the remainder of the meat in my freezer to create meals for the week. I have been trying to use up all of the leftovers from previous meals once a week to save time and money as well. I restocked the freezer on Sunday with meats since ACME was having an awesome Buy One Get One Sale on many of its cuts so I should be good for a few weeks now! (time to peek at Pinterest for some new meal ideas!) Here is what we have planned this week:
Sunday – We had an appointment for family pictures late afternoon so I figured the slow cooker would be a great way to get a meal ready in no time when we got back. I went with a Beef Eye Round Roast made in the slow cooker topped with two cans of fat free cream of mushroom soup and a packet of onion soup mix – I served it with homemade mashed potatoes (which were frozen from a previous meal) and mixed vegetables.
Monday – Turkey Breast topped with a package of onion soup mix cooked in the slow cooker and served with gravy, stuffing, corn and cranberry sauce. It was like a mini Thanksgiving! The turkey in the slow cooker turned out perfect!
Tuesday – Taco Tuesday – Ground turkey tacos with all of the fixings
Wednesday – Fish Sticks, baked French fries and veggies
Thursday – Leftovers
Friday – Heading to a birthday party
