Menu Plan Monday – What’s Cooking at Our House This Week

Those of you who follow my weekly menu plans may have noticed that I did not post a menu last week. After receiving a discount code from a friend, I decided to give Hello Fresh a try for 3 days.  I decided to go with the two person three meal plan since it was more reasonable to do so and I wasn’t sure how much the kids would enjoy the meals. I made easy dinners for the kids on the 3 days we enjoyed the Hello Fresh Meals.  Let’s just say I was super impressed! The kit with all of its contents arrived to me on Tuesday afternoon.  It was packed with a ice pack and insulated wrap and nice and cold and fresh upon arrival.  We chose our three days based on offerings on their website for the week – all three turned out fabulous.  I loved that all of the ingredients were just enough to make the meal – no waste!  There were plenty of veggies incorporated into the meals and for the most part preparation was easy with a complete meal in about 30 – 40 minutes including prep time.  I highly recommend giving it a try if you haven’t already done so. (You can pause or cancel your subscription anytime!)

This week we are back to menu planning on our own.  I still had plenty in the freezer to get us through the week. Here is what is on our menu:

Monday – Ground Turkey Unstuffed Cabbage Rolls and brown rice (cooked earlier in the day and it reheated beautifully for dinner)

TuesdayRoast Sticky Chicken Rotisserie Style (in the slow cooker), Baby red Mashed Potatoes, roasted butternut squash

WednesdayShrimp Foil Packets with Italian Turkey Sausage

Thursday – Leftovers

Friday – Pizza for hubby and the kids; I am heading out to dinner with friends
