Last week I skipped the menu plan because I decided to do a freezer clean out and make dinner from various things we had on hand. When I do this sometimes everyone in the house ends up with something different for dinner but no one seems to complain. Obviously there was plenty on hand since it got us through the whole week (with the exception of Friday when I ran the kids through Chick-Fil-A for dinner since we had a hectic schedule that afternoon/evening). We finally relaxed and enjoyed a delicious St. Patty’s dinner on Saturday night with boiled ham, cabbage and potatoes – and a yummy Irish Soda Bread that my daughter and I whipped up on Saturday afternoon. It was delicious! As a bonus I used up the leftover ham to make a Homemade Ham and Bean soup which was perfect for Sunday dinner with some bread and will be great for a few lunches this week as well. Here we are back to menu planning this week and here is what is planned:
Sunday – Homemade Ham and Bean Soup (made with leftover ham from our St. Patty’s Dinner on Saturday)
Monday – Korean Beef and Rice, edamame
Tuesday – Homemade Classic Chicken Pot Pie
Wednesday – Leftovers
Thursday – Turkey Hot Dogs, baked french fries, baby carrots and dip
Friday – Lobsters, Crab Cakes, potatoes and corn on the cob
