Those of you who follow my weekly menu plans may have noticed that I did not post a menu last week. After receiving a discount code from a friend, I decided to give Blue Apron a try for 3 days. I decided to go with the two person three meal plan since it was more reasonable to do so and I wasn’t sure how much the kids would enjoy the meals. I made easy dinners for the kids on the 3 days we enjoyed the Blue Apron Meals. Let’s just say I was super impressed! The kit with all of its contents arrived to me on Monday afternoon. It was packed with a ice pack and insulated wrap and nice and cold and fresh upon arrival. Unlike Hello Fresh, three random dinner options were sent to be based on a preference sheet I filled out on the website – all three turned out fabulous. I loved that all of the ingredients were just enough to make the meal – no waste! There were plenty of veggies incorporated into the meals and for the most part preparation was easy with a complete meal in about 30 – 40 minutes including prep time. I highly recommend giving it a try if you haven’t already done so. (You can pause or cancel your subscription anytime!)
This week we are back to menu planning on our own. I still had plenty in the freezer to get us through the week. Here is what is on our menu:
Monday – BBQ Chicken Thighs in the Slow Cooker, Roasted potato slices, salad
Tuesday – Eggs, ham, hashbrowns, OJ
Wednesday – Pork Schnitzel (from Aldi) served with steamed veggies
Thursday – Veal Parmigiana patties, Healthy Harvest Egg Noodles, steamed veggies
Friday – Fish Sticks for the kids, crabcakes for hubby and me, steamed veggies
