Herb & Garlic Chicken Caprese Wraps and Other Meals in Minutes Using Marinades

Back to school is not only crazy and hectic – but it is expensive!  One way we keep our budget in check is by devising a weekly meal plan that will work despite our hectic sports and other extracurricular activities.  I’ve found that by using my slow cooker on a regular basis as well as taking advantage of grilling as far into the cold months as I can , I am able to prepare quick and easy meals that work with just about everyone’s schedule in the house (well – most of the time anyway).

One of the challenges of frequent slow cooker meals and grilling is finding new ways to prepare easy and healthy meals that the family will enjoy and not get bored with too quickly. I am always playing with new ingredients and doing my best to switch things up and I found that sometimes a few quick ingredients can add a bold, fresh twist to the otherwise routine everyday meals.

Wholesome Pantry Organic Marinades and Ketchup

ShopRite recently sent me a few products from their Wholesome Pantry organic line to help me create a BBQ meal that hopefully my family would consider buzz-worthy! I was excited to find Wholesome Pantry Organic Herb & Garlic Marinades as well as Whole Pantry Organic Tomato Ketchup inside. (What a perfect beginning to easy, healthy meals!)  In addition, I was sent a gift card to pick up some ingredients  as well as some lovely tips from ShopRite Chef Richard Giacalone for some drool-worthy dinner inspiration!

Burger sauce made with Wholesome Pantry Organic Ketchup

The night I received the package, I had already planned some homemade burgers for dinner so I decided to try whipping up a burger sauce using Wholesome Pantry Organic Ketchup.  Using some ketchup, mayo, relish, seasoned salt, cracked pepper and a splash of Worcestershire sauce, I added a pinch and dash of each to my mayo and ketchup mix and ended up with a delicious burger sauce that the whole family raved about. We have found that the ketchup itself is also super fresh and flavorful on its on – not too sweet and is great for dipping!

A few days later, I was eager to give the Herb & Garlic Marinade a try.  The weather happened to be especially nice that day so I popped the chicken into some marinade when I woke up in the morning and let it marinade all day while I went on my merry way.  By dinner the chicken was ready to go, and I fired up the grill and decided to turn the chicken into yummy Herb & Garlic Chicken Caprese Wraps for dinner. This dinner turned out so heavenly that my family insisted that I make it part of our regular rotation.  The marinade gave the chicken such a flavorful zing that paired perfectly with all of the other ingredients in our wrap.

Herb & Garlic Chicken Caprese Wrap

Herb & Garlic Chicken Caprese Wrap

Quick and easy dinner in 30 minutes or less

Course Lunch or Dinner

Ingredients

  • Boneless Chicken breasts I prefer to slice mine thin for grilling
  • Soft Flour Tortillas
  • Wholesome Pantry Organic Herb & Garlic Marinade from ShopRite
  • Tiny Mozzarella pearls drained or Mozzarella Balls (halved)
  • A jar of Roasted Red Peppers
  • a Pint of Grape Tomatoes
  • A bag of Fresh Baby Spinach
  • Garlic I like to use the Frozen Garlic Cubes from Trader Joe's
  • Olive Oil
  • Salt
  • Pepper
  • Balsamic Glaze

Instructions

  1. Marinade chicken in the Wholesome Pantry Organic Garlic & Herb Marinade for 30 minutes or more. (I prefer to marinade mine all day or overnight)
  2. When ready, heat grill and cook chicken on both sides until done. Once chicken is done, remove from grill and tent with aluminum until ready to use.
  3. While chicken is grilling (or before grilling chicken), place grape tomatoes on a sheet pan and bake in oven at 400 degrees until tomatoes burst ( a little charring is normal and adds to the flavor). Be sure to agitate pan or turn tomatoes a few times during cooking to cook all sides evenly. Usually I find they take 20 - 30 minutes to burst.
  4. In a sauté pan, add a touch of olive oil and a garlic cube. Once heated, add bag of baby spinach, salt and pepper and sauté a few minutes until wilted. Remove from heat.
  5. Brush tortillas with a touch of oil on each side and place on grill for a few seconds each side to heat. Remove from grill, place on plate and tent with aluminum until ready to eat.
  6. Slice chicken into thin slices or chunks
  7. Place a chicken slices, roasted red peppers, a few burst tomatoes, a bit of sautéed spinach, and few mini mozzarella balls or pearls onto a grilled tortilla. Drizzle with balsamic glaze, wrap and enjoy!

I also grilled some extra chicken to use on our salads for lunch.  By making a little extra, it saved time during my busy weekday and was an easy and healthy option for lunch! The chicken stayed moist and delicious and made lunches so much more enjoyable all week!

Wholesome Pantry Shrimp

Last but not least, after all of my previous successes I was quite eager to put the Wholesome Pantry Organic Teriyaki marinade to the test.  This time we switched it up and decided to make a meal using some seafood.  What is great about seafood such as shrimp is that the marinade only needs to set for about 15 minutes or so before grilling.  I love that prep can be very last minute and still end up with a flavorful ending. During my trip to ShopRite, I decided to grab a bag of frozen Wholesome Pantry Shrimp, some fresh veggies (red onions and orange peppers) and a can of pineapple chunks.

Once home, I defrosted the shrimp under cold running water and pulled off the shells and tails.  Once thawed, I popped them into some marinade and placed in the refrigerator for about 15 minutes. While the shrimp was thawing, I chopped up the peppers and onion into large chunks and drained the pineapple chunks.  When the shrimp was ready, I threaded shrimp, peppers, onions and pineapples onto skewers and proceeded to the grill.  I grilled the skewers, flipping once until cooked.  I brushed each side with some marinade just before finished.  The finished product was a simple yet pretty and mouth-watering meal and paired perfectly with some rice and steamed edamame!

All in all, my family and I are truly enjoying all of these products from ShopRite’s Wholesome Pantry Line! I am looking forward to getting creative with more easy meals using the delicious marinades and maybe even trying my hand at a homemade BBQ glaze made from the Wholesome Pantry Organic Ketchup!
